I heard about iPhone Live Listen today and played around with it a bit.  We can use our iPhone as a remote mic.  

Although it mentions AirPods and a specific BT headphone in this link, it does work with the Artone 3 MAX BT neckloop as well as BOSE QC35 BT around the ear headphones.

I am not recommending that we use this to spy on people but this video was helpful in setting it up.
